Description

A savory, tangy, and tender Filipino chicken dish simmered in soy sauce, vinegar, garlic, and bay leaves — a timeless comfort food favorite.


Ingredients

Scale
  • 2 lbs chicken thighs or drumsticks
  • 1/2 cup soy sauce
  • 1/3 cup cane vinegar or white vinegar
  • 6 garlic cloves, smashed
  • 2 bay leaves
  • 1 tsp whole black peppercorns
  • 1 tbsp brown sugar (optional)
  • 1 tbsp oil
  • 1/2 cup water
  • Steamed rice, for serving

Instructions

  • Marinate chicken in soy sauce, vinegar, garlic, bay leaves, pepper, and sugar for at least 30 minutes.
  • In a pot, heat oil and brown the chicken.
  • Add marinade and water. Simmer covered for 25–30 minutes.
  • Uncover and cook 10 minutes more to thicken sauce.
  • Serve over rice.

Notes

  • Use low-sodium soy sauce to control saltiness.
  • Coconut vinegar or apple cider vinegar can be substituted.
  • Tastes even better the next day!
