A savory, tangy, and tender Filipino chicken dish simmered in soy sauce, vinegar, garlic, and bay leaves — a timeless comfort food favorite.
Ingredients

- 2 lbs chicken thighs or drumsticks
- 1/2 cup soy sauce
- 1/3 cup cane vinegar or white vinegar
- 6 garlic cloves, smashed
- 2 bay leaves
- 1 tsp whole black peppercorns
- 1 tbsp brown sugar (optional)
- 1 tbsp oil
- 1/2 cup water
- Steamed rice, for serving
Instructions
- Marinate chicken in soy sauce, vinegar, garlic, bay leaves, pepper, and sugar for at least 30 minutes.
- In a pot, heat oil and brown the chicken.
- Add marinade and water. Simmer covered for 25–30 minutes.
- Uncover and cook 10 minutes more to thicken sauce.
- Serve over rice.
Notes
- Use low-sodium soy sauce to control saltiness.
- Coconut vinegar or apple cider vinegar can be substituted.
- Tastes even better the next day!
