A quick, spicy, and creamy pasta dish made with bold chorizo, tomato paste, and heavy cream – perfect for a satisfying weeknight dinner.
Ingredients

- 8 oz penne or rigatoni pasta
- 1 tbsp olive oil
- 7 oz chorizo sausage (casing removed)
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1/2 tsp red pepper flakes (optional)
- 1/2 cup tomato paste
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 1/4 cup reserved pasta water
- Fresh parsley or basil for garnish
Instructions
- Cook pasta in salted water; reserve 1/4 cup of pasta water, then drain.
- Heat oil in a pan, cook chorizo until browned.
- Add onion, cook 2–3 minutes. Add garlic and pepper flakes; cook 30 seconds.
- Stir in tomato paste and cook 2–3 minutes. Add cream and simmer.
- Toss in pasta, add pasta water as needed, stir in Parmesan. Season and garnish.
