Creamy Chorizo Pasta

Description

A quick, spicy, and creamy pasta dish made with bold chorizo, tomato paste, and heavy cream – perfect for a satisfying weeknight dinner.


Ingredients

Scale
  • 8 oz penne or rigatoni pasta
  • 1 tbsp olive oil
  • 7 oz chorizo sausage (casing removed)
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup tomato paste
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 cup reserved pasta water
  • Fresh parsley or basil for garnish

Instructions

  • Cook pasta in salted water; reserve 1/4 cup of pasta water, then drain.
  • Heat oil in a pan, cook chorizo until browned.
  • Add onion, cook 2–3 minutes. Add garlic and pepper flakes; cook 30 seconds.
  • Stir in tomato paste and cook 2–3 minutes. Add cream and simmer.
  • Toss in pasta, add pasta water as needed, stir in Parmesan. Season and garnish.

Notes

  • Use Mexican or Spanish chorizo depending on spice preference.

  • Lighten the dish by using Greek yogurt or half-and-half.

 

  • Add spinach or mushrooms for extra veggies.
