Description

This classic chuck roast recipe utilizes the low and slow cooking method to transform a tough cut of beef into a succulent, tender meal. Flavored with fresh herbs and vegetables, this roast is perfect for a comforting family dinner.

Ingredients

  • 1 (3-4 pound) chuck roast
  • Salt and pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2–3 cloves of garlic, minced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2–3 carrots, peeled and chopped
  • 2–3 stalks celery, chopped
  • 2–3 sprigs fresh thyme
  • 2–3 sprigs fresh rosemary

Instructions

  1. Preheat the oven to 275°F.
  2. Season the chuck roast with salt and pepper.
  3. Heat oil in a Dutch oven over medium-high. Sear roast until browned on all sides, about 3-4 minutes per side.
  4. Remove roast, add onions to the pot; cook until softened. Add garlic, cook 1-2 minutes.
  5. Pour in broth and wine, deglaze pot. Return roast to pot, add carrots, celery, thyme, and rosemary.
  6. Cover, transfer to oven. Cook for 3-4 hours, until meat is tender.

Notes

  • The red wine adds depth to the broth but can be omitted if preferred.
  • Serve with mashed potatoes or crusty bread to soak up the delicious sauce.
