This classic chuck roast recipe utilizes the low and slow cooking method to transform a tough cut of beef into a succulent, tender meal. Flavored with fresh herbs and vegetables, this roast is perfect for a comforting family dinner.
Ingredients
- 1 (3-4 pound) chuck roast
- Salt and pepper, to taste
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2–3 cloves of garlic, minced
- 2 cups beef broth
- 1 cup red wine (optional)
- 2–3 carrots, peeled and chopped
- 2–3 stalks celery, chopped
- 2–3 sprigs fresh thyme
- 2–3 sprigs fresh rosemary
Instructions
- Preheat the oven to 275°F.
- Season the chuck roast with salt and pepper.
- Heat oil in a Dutch oven over medium-high. Sear roast until browned on all sides, about 3-4 minutes per side.
- Remove roast, add onions to the pot; cook until softened. Add garlic, cook 1-2 minutes.
- Pour in broth and wine, deglaze pot. Return roast to pot, add carrots, celery, thyme, and rosemary.
- Cover, transfer to oven. Cook for 3-4 hours, until meat is tender.
Notes
- The red wine adds depth to the broth but can be omitted if preferred.
- Serve with mashed potatoes or crusty bread to soak up the delicious sauce.
