- 8 oz penne pasta
- 1/4 cup olive oil
- 1 small shallot or 1/4 red onion, finely chopped
- 2 garlic cloves, minced
- 1/4 cup tomato paste
- 1/2 tsp red chili flakes (adjust to taste)
- 1/2 cup heavy cream
- 1 tbsp unsalted butter
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- 2–3 tbsp reserved pasta water
Instructions
- Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup of pasta water and drain the rest.
- In a skillet, heat olive oil over medium heat. Add chopped shallots and cook until softened, 2–3 minutes. Add garlic and sauté for 30 seconds.
- Stir in tomato paste and chili flakes. Cook for 3–4 minutes, until the paste deepens in color.
- Reduce heat to medium-low. Add cream and stir to combine. Mix in butter until melted. Season with salt and pepper.
- Add cooked pasta to the sauce. Toss well to coat. Add reserved pasta water a little at a time to loosen the sauce if needed.
- Stir in Parmesan cheese until melted and the sauce becomes creamy.
- Garnish with parsley or basil. Serve hot.
