Description

Ingredients

  • 8 oz penne pasta
  • 1/4 cup olive oil
  • 1 small shallot or 1/4 red onion, finely chopped
  • 2 garlic cloves, minced
  • 1/4 cup tomato paste
  • 1/2 tsp red chili flakes (adjust to taste)
  • 1/2 cup heavy cream
  • 1 tbsp unsalted butter
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 23 tbsp reserved pasta water

 


Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup of pasta water and drain the rest.
  2. In a skillet, heat olive oil over medium heat. Add chopped shallots and cook until softened, 2–3 minutes. Add garlic and sauté for 30 seconds.
  3. Stir in tomato paste and chili flakes. Cook for 3–4 minutes, until the paste deepens in color.
  4. Reduce heat to medium-low. Add cream and stir to combine. Mix in butter until melted. Season with salt and pepper.
  5. Add cooked pasta to the sauce. Toss well to coat. Add reserved pasta water a little at a time to loosen the sauce if needed.
  6. Stir in Parmesan cheese until melted and the sauce becomes creamy.
  7. Garnish with parsley or basil. Serve hot.

Notes

  • No vodka needed – halal and family-friendly.
  • Use half-and-half instead of cream for a lighter version.
  • Add grilled chicken or shrimp for more protein.
