Description

A fun, no-bake dessert featuring crispy cinnamon-sugar tortilla chips, fluffy cheesecake filling, and a fresh strawberry topping. Perfect for parties, picnics, or quick family treats!

Ingredients

Scale
  • Ingredients:
  • For the Cinnamon Sugar Chips:
  • 6 (8-inch) flour tortillas
  • 1/3 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • For the Cheesecake Filling:
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping (e.g., Cool Whip)
  • For the Strawberry Topping:
  • 1 cup fresh strawberries, diced
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice

Instructions

  • Prepare the Chips:
Preheat oven to 375°F (or use an air fryer). Brush both sides of tortillas with melted butter. Cut each tortilla into 6–8 triangles. Mix sugar and cinnamon in a bowl. Sprinkle the mixture on both sides of the tortilla pieces. Bake for 6–8 minutes until crispy and golden. Let cool.
  • Make the Cheesecake Filling:
In a bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until creamy. Fold in whipped topping until light and fluffy. Set aside.
  • Prepare Strawberry Topping:
In a separate bowl, combine diced strawberries, sugar, and lemon juice. Stir and let sit for 10–15 minutes until the strawberries release their juice.
  • Assemble Nachos:
Arrange cinnamon sugar chips on a large platter. Spoon or pipe cheesecake filling over the chips. Top with strawberry mixture. Add optional toppings like whipped cream or white chocolate chips if desired.

Notes

  • Use fresh, ripe strawberries for the best flavor.
  • Want extra crunch? Add crushed graham crackers or chopped nuts on top.
  • Chips and filling can be made ahead and stored separately. Assemble just before serving for best texture.
  • Swap strawberries for mixed berries for a colorful twist.
