Description

Creamy cheesecake pudding with swirls of fresh strawberry sauce, topped with a crunchy graham cracker crust.


Ingredients

  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon sugar
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup fresh strawberries, diced
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice

Instructions

  1. In a bowl, mix graham cracker crumbs, melted butter, and 1 tablespoon of sugar until well combined. Press the mixture into the bottom of serving glasses or jars to form the crust. Set aside.
  2. In another bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, beat until creamy.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
  4. In a small saucepan, combine diced strawberries, 2 tablespoons of sugar, and lemon juice. Cook over medium heat until strawberries soften and release their juices, about 5-7 minutes. Mash the strawberries with a fork to break them down into a sauce consistency. Let cool slightly.
  5. Spoon the cheesecake mixture over the graham cracker crust in the serving glasses or jars, leaving some space at the top for the strawberry sauce.
  6. Spoon the strawberry sauce over the cheesecake mixture in each glass or jar, swirling it gently with a spoon.
  7. Refrigerate for at least 2 hours to set.
  8. Before serving, you can optionally garnish with additional diced strawberries or a dollop of whipped cream.

Notes

  • You can adjust the sweetness of the strawberry sauce according to your taste preference by adding more or less sugar.
  • For a smoother texture, you can strain the strawberry sauce before adding it to the pudding.
  • This recipe can be easily doubled or halved depending on your serving needs.
