Description
Creamy cheesecake pudding with swirls of fresh strawberry sauce, topped with a crunchy graham cracker crust.
Ingredients
- 1 cup graham cracker crumbs
- 4 tablespoons unsalted butter, melted
- 1 tablespoon sugar
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 cup fresh strawberries, diced
- 2 tablespoons sugar
- 1 tablespoon lemon juice
Instructions
- In a bowl, mix graham cracker crumbs, melted butter, and 1 tablespoon of sugar until well combined. Press the mixture into the bottom of serving glasses or jars to form the crust. Set aside.
- In another bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, beat until creamy.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
- In a small saucepan, combine diced strawberries, 2 tablespoons of sugar, and lemon juice. Cook over medium heat until strawberries soften and release their juices, about 5-7 minutes. Mash the strawberries with a fork to break them down into a sauce consistency. Let cool slightly.
- Spoon the cheesecake mixture over the graham cracker crust in the serving glasses or jars, leaving some space at the top for the strawberry sauce.
- Spoon the strawberry sauce over the cheesecake mixture in each glass or jar, swirling it gently with a spoon.
- Refrigerate for at least 2 hours to set.
- Before serving, you can optionally garnish with additional diced strawberries or a dollop of whipped cream.
Notes
- You can adjust the sweetness of the strawberry sauce according to your taste preference by adding more or less sugar.
- For a smoother texture, you can strain the strawberry sauce before adding it to the pudding.
- This recipe can be easily doubled or halved depending on your serving needs.
