Ingredients
- For the Cake:
- 3 cups all-purpose flour
- 2 ½ cups granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 cup whole milk
- 2 teaspoons vanilla extract
- Gel food coloring (pink, blue, purple, yellow)
- For the Frosting:
- 1 ½ cups unsalted butter, softened
- 5 cups powdered sugar
- 2 teaspoons vanilla extract
- 3–5 tablespoons heavy cream
- Food coloring as desired for decoration
- Edible glitter and unicorn decorations
Instructions
- Preheat the oven to 350°F (175°C). Grease and line four 8-inch cake pans.
- Make the cake batter: In a large bowl, sift together flour, sugar, baking powder, and salt. Add butter, eggs, milk, and vanilla extract, and beat until smooth.
- Divide the batter into four bowls. Color each with a different gel food coloring. Pour into prepared pans.
- Bake for 25-30 minutes until a toothpick inserted comes out clean. Cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
- Make the frosting: Beat butter until creamy. Gradually add powdered sugar, vanilla, and enough cream to achieve a spreadable consistency.
- Assemble the cake: Place one layer on a cake stand, spread frosting, and repeat with each layer. Apply a thin crumb coat, chill for 20 minutes, then apply a final thick layer of frosting.
- Decorate with edible glitter and unicorn-themed decorations.
Notes
- Use gel food coloring for vibrant colors without adding too much liquid to the batter.
- Allow the cake layers to cool completely before frosting to prevent the buttercream from melting.
