Description

Ingredients

  • For the Cake:
    • 3 cups all-purpose flour
    • 2 ½ cups granulated sugar
    • 1 tablespoon baking powder
    • ½ teaspoon salt
    • 1 cup unsalted butter, softened
    • 4 large eggs
    • 1 cup whole milk
    • 2 teaspoons vanilla extract
    • Gel food coloring (pink, blue, purple, yellow)
  • For the Frosting:
    • 1 ½ cups unsalted butter, softened
    • 5 cups powdered sugar
    • 2 teaspoons vanilla extract
    • 35 tablespoons heavy cream
    • Food coloring as desired for decoration
    • Edible glitter and unicorn decorations

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line four 8-inch cake pans.
  2. Make the cake batter: In a large bowl, sift together flour, sugar, baking powder, and salt. Add butter, eggs, milk, and vanilla extract, and beat until smooth.
  3. Divide the batter into four bowls. Color each with a different gel food coloring. Pour into prepared pans.
  4. Bake for 25-30 minutes until a toothpick inserted comes out clean. Cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
  5. Make the frosting: Beat butter until creamy. Gradually add powdered sugar, vanilla, and enough cream to achieve a spreadable consistency.
  6. Assemble the cake: Place one layer on a cake stand, spread frosting, and repeat with each layer. Apply a thin crumb coat, chill for 20 minutes, then apply a final thick layer of frosting.
  7. Decorate with edible glitter and unicorn-themed decorations.

Notes

  • Use gel food coloring for vibrant colors without adding too much liquid to the batter.
  • Allow the cake layers to cool completely before frosting to prevent the buttercream from melting.
