A delicious twist on the classic sloppy joe, infused with the flavors of Cajun chicken gumbo.
Ingredients
- 1 lb ground chicken
- 1 onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup okra, sliced
- 1 tbsp Cajun seasoning
- 1/4 cup chicken broth
- 1/4 cup ketchup
- 2 tbsp Worcestershire sauce
- 2 tbsp brown sugar
- Salt and pepper to taste
- Hamburger buns or sandwich rolls
Instructions
- In a skillet over medium heat, brown the ground chicken until fully cooked, breaking it apart with a spoon.
- Add diced onion, bell pepper, and garlic to the skillet. Cook until vegetables are softened.
- Stir in diced tomatoes, sliced okra, Cajun seasoning, chicken broth, ketchup, Worcestershire sauce, and brown sugar. Simmer for 10-15 minutes until flavors meld and sauce thickens.
- Season with salt and pepper to taste.
- Spoon the chicken gumbo mixture onto hamburger buns or sandwich rolls.

Notes
Feel free to adjust the Cajun seasoning according to your spice preference. You can also add a dash of hot sauce for an extra kick.
